Fillet of Beef Marinated in Asian Beer
4pcs fillet steak, each 250g
½ bottle Asian beer, 160ml
½dsp cracked black peppercorns
For the sauce
6dsp soy sauce
1dsp black soy sauce
30g ginger, finely chopped
30g fresh green peppercorns
16 baby carrots, par-boiled
Marinate the steaks with salt, black peppercorns and Asian beer for a minimum of 3 hours.
To make the sauce:
- Put the soy sauce, black soy sauce, ginger, sugar and water in a saucepan, bring to the boil and reduce it until the sauce is thick. Keep to one side.
- Heat the char-grill until hot, brush the steaks with a little oil, then cook the steak to taste, approximately 1 minute each side for rare, 2 minutes each side for medium, 5 minutes each side for well done.
- Cut the steaks into 8 pieces.
- Reheat the sauce gently, add the fresh green peppercorns.
