Serves 4 as a starter

Chicken Wings with Honey Glaze

Ingredients:

1kg chicken wings

3dsp soy sauce

1½dsp paprika powder

2dsp vegetable oil for frying

For the sauce:

4dsp tomato ketchup

1dsp sugar

3dsp honey

2dsp soy sauce

2dsp white vinegar

4dsp water

1dsp roasted white sesame seeds, p267, to garnish

Cooking method:

Heat the oven to 180°C/gas mark 4

To prepare the chicken wings:

Trim the chicken wings by cutting them at each joint and discard the piece with the tip which has no flesh.

Mix together the soy sauce and paprika powder and marinate the chicken pieces for at least 1 hour.

Put the chicken in the oven, cook for 20 minutes and then allow to cool.

 

To make the sauce:

Mix together the tomato ketchup, sugar, honey, soy sauce, vinegar and water. Bring a wok to a high heat, add the oil, then cook the chicken and stir-fry for a couple of minutes. Once the skin on the wings has crisped, reduce the heat and add the sauce. Stir until the chicken is well coated.

To serve 

Put on a plate, sprinkle with roasted white  sesame seeds.
